⚗️ Why It Never Crystallises

Crystallization starts with glucose. Acacia honey has so little of it relative to fructose that there simply isn't enough to form crystals — it's chemistry, not a sign of processing.

🌡️ The 45°C Rule

Heating honey above 45°C destroys enzymes and reduces antioxidant content. We never do it — which is why our honey retains what commercial honey doesn't.

White Acacia has an unusually high fructose-to-glucose ratio. Since crystallization is triggered by glucose, Acacia honey simply doesn't have enough of it to form crystals — it stays liquid for months, sometimes over a year, completely naturally.
White Acacia honey has a naturally lower glycemic load than standard honey due to its fructose-dominant sugar profile. It's absorbed more gradually. That said, it is still honey — we'd always recommend speaking to your doctor if you have specific dietary conditions.
Most commercial honey is blended from multiple origins, heated for consistency, ultra-filtered to remove pollen, and sometimes adulterated with syrup. Ours is single-origin, never heated above 45°C, unfiltered, and fully traceable to the specific farm it came from.
Room temperature, away from direct sunlight, lid tightly closed. Do not refrigerate. White Acacia is particularly forgiving on storage — it won't crystallize easily and doesn't require any special conditions beyond keeping it dry and out of heat.
