Sundarban Multifloral bees forage across dozens of native mangrove species, which is why the colour runs deep amber to near-black depending on the season.
Because it is different. Commercial honey is usually pasteurized, heavily filtered, and blended from multiple countries — all processes that flatten the flavour to a consistent, neutral sweet. Sundarban Multifloral is unheated, unfiltered, and comes from one forest. The complexity you taste is simply what honey actually tastes like, unaltered.
Yes — like all raw honey, it may crystallize over time. Crystallization is a natural sign of purity, not a defect. To return it to liquid, place the sealed jar in warm (not boiling) water for 10–15 minutes. Never microwave raw honey — the heat destroys the enzymes and antibacterial compounds that make it worth buying.
The Sundarbans flowers in brief seasonal windows. Honey hunters — mawalis — enter the forest during these short periods to harvest by hand. There is no way to increase the yield without damaging the ecosystem. When the season ends, the supply ends. We do not blend it with honey from other sources to extend it.
Room temperature, lid tightly closed, away from direct sunlight and heat. Do not refrigerate — cold accelerates crystallization. Raw honey has an indefinitely long shelf life when stored correctly, so there is no urgency to finish it quickly, though most people do anyway.
