Litchi trees bloom for just a few weeks each year. Beekeepers move their hives into Bihar's litchi orchards during this precise window to capture monofloral honey from a single source. Once the bloom ends and hives move on, the season's supply is fixed. We do not blend it with other honey to extend stock — when it's gone, it's gone until next year.
Litchi honey's relatively high fructose content means it crystallizes more slowly than mustard honey — it will typically stay liquid for several months before gradually setting. If it does crystallize, place the jar in warm water for 10–15 minutes. Crystallization is a sign of purity, not spoilage.
Litchi honey is safe for children over 12 months old. Like all honey, it should not be given to infants under 1 year due to the risk of infant botulism. For older children, its light, naturally sweet flavour makes it an excellent substitute for refined sugar in drinks and food.
Room temperature, lid tightly closed, away from direct sunlight. Do not refrigerate. Because this is a seasonal honey with a fixed annual supply, storing it properly ensures it lasts until you're ready for it — raw honey has an indefinitely long shelf life when kept correctly.
